About this place
When cross-hatched bigfin reef squid is seasoned lightly with sudachi citrus and salt, it melts across the palate, releasing a deep sweetness. At Nishi-Azabu's Sushi Tsuu, this intricate prep and knife work tailored to each fish leave an enduring impression. Aged fish such as striped jack, rested to concentrate umami, and medium-fatty chutoro scored finely so that it yields at body temperature demonstrate how each piece is engineered for fish and vinegared rice to merge seamlessly.
The omakase pacing features sharp shifts in tempo, where warm dishes punctuate the cooler pieces of nigiri. Morsels handed across the counter—like blackthroat seaperch with skin crisped over charcoal—appear alongside small hot pots steeped in savory dashi and bonito sashimi deepened with fermented skipjack-viscera miso. From rich hand rolls pairing sea urchin with chopped tuna to thick sushi rolls and tenderly simmered anago, the sequence delivers satisfying substance throughout.
In the serene basement setting, guests will find private rooms alongside the counter that looks directly onto the chef's hands, making it easy to savor wine or beer at an unhurried pace. Omakase courses are offered for both lunch and dinner, and advance reservations are recommended before visiting.
